Kabo Curry Masala Chicken Gyros Crispy Air Fryer Wraps Worth the Marinade

Bold Indian flavour meets the easiest weeknight wrap you'll ever make. The air fryer does the heavy lifting  crispy skin, juicy meat, zero fuss. Switch out Curry Masala for any other Kabo blend to make it same same, but different!

Make two batches if you have more mouths to feed. This feeds 4 comfortably with one lot of chicken. 

Ingredients

Marinade for every 500g Deboned Chicken Legs (skin on)

  • 1 sachet Kabo Curry Masala blend
  • 1 tablespoon olive oil
  • 1 tablespoon Greek yoghurt
  • 1/2 tablespoon lemon juice

Other Ingredients

  • 4 large spinach wraps
  • French fries  frozen or fresh cut (air fryer, 200C for 15 minutes)
  • 1 cup shredded iceberg lettuce
  • 2 tomatoes, diced
  • 1/2 red onion, thinly sliced
  • Fresh coriander to serve

Raita (quick yoghurt sauce)

  • 1/2 cup Greek yoghurt
  • 1/4 cucumber, grated and squeezed dry
  • 1 clove garlic, minced
  • Pinch of salt and cumin
  • Squeeze of lemon

Directions

  1. Mix Kabo Curry Masala, olive oil, yoghurt and lemon juice together in a bowl to form the marinade
  2. Coat deboned chicken legs thoroughly make sure you  the marinade under the skin for maximum flavour
  3. Marinate for at least 30 minutes or even overnight in the fridge is even better
  4. Preheat air fryer to 200C
  5. Place chicken skin side up in the air fryer basket ,try not to overlap, it helps to keep the meat char well and skin crispy.
  6. Air fry for 22–25 minutes until skin is golden and crispy and internal temperature reaches 75C
  7. Rest the chicken for 5 minutes before slicing
  8. While chicken rests cook your french fries in the air fryer at 200C for 15 minutes until golden
  9. Slice chicken thinly across the grain, you want thin strips with crispy skin pieces throughout
  10. Warm your spinach wraps for 20 seconds in the microwave or dry pan
  11. Layer raita down the centre of each wrap first
  12. Add lettuce, tomato and red onion
  13. Pile on the sliced Kabo curry chicken generously
  14. Add french fries right into the wrap thats right, inside the wrap
  15. Top with fresh coriander and a squeeze of lemon
  16. Fold and serve immediately.

Tip: The yoghurt in the marinade keeps the chicken incredibly juicy even in the air fryer. Don't skip it.

Tip: Swap Kabo Curry Masala for Kabo Coconut Curry for a milder, creamier version — equally incredible.
