What You Need
- 2 chicken breasts or thighs
- 1–2 tsp KABO Coconut Curry Blend
- 1 tbsp oil
- 1 cup cooked quinoa
- Salt to taste
- Optional: cucumber, cherry tomatoes, fresh herbs to serve
Method
- Rub chicken with KABO Coconut Curry Blend, oil, and salt.
- Grill or pan-fry over medium-high heat for 5–7 minutes each side until cooked through.
- Rest for 2 minutes, then slice.
- Serve over warm quinoa with your choice of fresh salad toppings.
Chef's Tip
This recipe also works brilliantly in an air fryer at 190°C for 12 minutes. The coconut spice blend gives the chicken a beautiful golden crust.
