Quinoa and grilled chicken

A light, protein-packed meal that works any day of the week. Grilled chicken marinated in KABO Coconut Curry Blend pairs beautifully with fluffy quinoa for a balanced, flavour-forward dish that comes together in under 20 minutes.

What You Need

  • 2 chicken breasts or thighs
  • 1–2 tsp KABO Coconut Curry Blend
  • 1 tbsp oil
  • 1 cup cooked quinoa
  • Salt to taste
  • Optional: cucumber, cherry tomatoes, fresh herbs to serve

Method

  1. Rub chicken with KABO Coconut Curry Blend, oil, and salt.
  2. Grill or pan-fry over medium-high heat for 5–7 minutes each side until cooked through.
  3. Rest for 2 minutes, then slice.
  4. Serve over warm quinoa with your choice of fresh salad toppings.

Chef's Tip

This recipe also works brilliantly in an air fryer at 190°C for 12 minutes. The coconut spice blend gives the chicken a beautiful golden crust.
