A 20 minute flavour-packed paneer stir-fry with colourful vegetables tossed in a rich, spiced tomato sauce made with KABO Curry Masala. Serve it with steamed rice for an simple easy weeknight meal.

Ingredients
- 200 g paneer, cut into bite-sized cubes
- 130 g mixed vegetables (broccoli, red capsicum, cabbage, leeks and tomato)
- 2 tbsp KABO Curry Masala
- 20 g tomato paste
- 50 ml olive oil
- 50 ml water
- 1 tbsp butter, optional
- Fresh coriander, chopped, to garnish
- Steamed rice, to serve
Method

Heat the pan
Place a large pan or wok over medium-high heat and add the olive oil. -
Release the KABO flavours
Add the KABO Curry Masala and sauté for about 30 seconds, stirring continuously. This helps release the roasted spices and aroma. -
Build the sauce
Add the tomato paste and stir through. Add the mixed vegetables and water, then increase the heat to high. -
Cook the vegetables
Cover and cook for about 2 minutes, or until the vegetables have softened while still retaining some bite. -
Add the paneer
Add the paneer and toss everything together. Continue stir-frying until the moisture has cooked away and the sauce becomes thick and coats the paneer and vegetables. -
Finish with butter
Turn off the heat and add a small dollop of butter, if using. Toss through for a glossy finish and a little extra richness. Taste for seasoning, add water to adjust the sauce to your requirement. -
Serve
Spoon over steamed rice and finish with freshly chopped coriander.
