Potato coconut curry

A creamy, comforting potato curry that proves simple ingredients can deliver extraordinary flavour. What You Need

  • 3 medium potatoes, peeled and diced
  • 35g KABO Coconut Curry Blend
  • 2 tbsp oil
  • 1.5 cups water
  • Salt to taste
  • Fresh coriander to serve

Method

  1. Heat oil in a pan over medium heat.
  2. Add KABO Coconut Curry Blend and sauté for 1 minute.
  3. Add diced potatoes and stir to coat in the spices.
  4. Add water, bring to a boil, then reduce heat, cover and simmer for 15–18 minutes until potatoes are tender.
  5. Season with salt, garnish with coriander, and serve with rice or roti.
