What You Need
- 3 medium potatoes, peeled and diced
- 35g KABO Coconut Curry Blend
- 2 tbsp oil
- 1.5 cups water
- Salt to taste
- Fresh coriander to serve
Method
- Heat oil in a pan over medium heat.
- Add KABO Coconut Curry Blend and sauté for 1 minute.
- Add diced potatoes and stir to coat in the spices.
- Add water, bring to a boil, then reduce heat, cover and simmer for 15–18 minutes until potatoes are tender.
- Season with salt, garnish with coriander, and serve with rice or roti.
